One of my friends in school had a petty neat power project he built his senior year. It was a 3 phase fault detector. He could detect they type of fault (line to line, line to neutral, line to ground) and report it very quickly.
If you are looking for a power electronics project I think that a DC to AC inverter is a fun project. You need a microcontroller, some IGBTs, and a low pass filter.
