Not many people do it because really, what's the point. You already wrote it. You probably already know what you wrote. Just save the state of the LCD in the MCU. Only the busy bit is really useful.
But if you have a reason to want to read data from the LCD, you can. Unless of course you are spying and passing information from one person to another then it might be an advantage to be able to read data from an LCD

Although i would have thought if you were that high tech then you wouldnt opt for an lcd you would be looking at highly sophisticated methods for passing information other than using a read back from an lcd seing as you can only store x amount of characters inside such a device
