The iPhone battery holds a charge of 1,440 mAh, or about 5.45 watt hours

How long would it take for 5 piezoelectric discs to charge 10% of this value if the discs are being pressed once every second?

Basically for ever. They are not intended for this sort of application, they produce short high voltage pulses during flexure, containing little energy. Work is being done to improve them.
If you want specific information, it is obviously dependent on the piezo device, If you have some, then set them up as in the link below, and see for yourself.
