As in the subject. Which gives the Legacy + Uefi option. How is it different from booting, for example in the mode with only Bios or only Uefi?

In BIOS + Legacy mode, you can set the boot order using media compatible with both options. If you set booting only from UEFI-compatible devices - only such devices will be visible on the list when setting the order of devices (despite the presence of devices that can be booted in legacy mode - they will not be available). The other way around is the same.
