I have a problem that when I listen to youtube music, the phone turns down and makes it louder, as if someone was doing it and took control of my phone. I don't know how to check that, I know that one person used to mess with my phone.

You answered yourself. You either have damaged headphones, or bad headphones (different pinout), which themselves trigger these functions, or a damaged jack connector - some kind of crap inside that sometimes shorts out, either mechanically, or some kind of corrosion, etc. First, look at the hole for the headphones and dig out trash it, if there is any, only gently and sensitively, because you can cause more damage by pushing something too deep.

These are another headphones that have this problem, for half a year there was no such problem, the jack connector is clean, but I cleaned it. This is strange because today I listened to music almost all day and there was no problem, and now for a moment the songs themselves switched and now it's quiet again. It looks like someone toggled it, I thought Google Assistant was messing something up. But I turned it off and it's still what it is.

Looks like a damaged connector. Might be buggy software. You can do a hard reset to be sure how you want to copy data etc.
