Hello, I have a question. I want to make a heating element out of nichrome that gets around 370 Celsius (around 700 Fahrenheit). Which gauge (thickness) and how long it should be.

You have provided two parameters as required: material and temperature. This is not enough to calculate the length or thickness - for a given material, thickness and temperature, the current can be determined; knowing the current, material, thickness and length you can determine the voltage; if you have no requirements for current and voltage, you can freely assume the thickness and length, and then select the current and voltage to meet the temperature requirement.
