If you're pretty early in schooling, I would suggest making somethnig you know enough to design yourself. Even if it is something that seems way too basic, like a resistor network or an RLC network, there is always challenge to be had in PCB design. You can try to make it as small as you can, try to use the shortest total amount of traces, make it a strange shape, etc. Just invent some arbitrary design requirements for yourself and it will be a good project.
My first PCB was a linear regulator, that converted from wall power (120V, 60Hz here in the states) to 24VDC, designed to drive load impedances > 10k ohms. Or, if you want something a little more complicated, try a switching regulator with adjustable output. If you want more complicated still, tack on a line filter, or an output buffer. All of these are very easily tested, and have cheap, easily aquired components.
