As David said, the transformer will see the phase-to-phase voltage. Using 120VAC phase-to-ground, you'd be getting 208VAC across the transformer. Unless the transformer was designed for 240VAC, it typically will not be able to handle this. I would suggest connecting one phase and neutral to the transformer, but the ground system supposedly isn't intended to carry any current.
