    I fire up without a problem, but after a longer route of about 15 minutes, when the temperature is about 85 degrees, the temperature indicator reaches the maximum, and then the fan turns on, then the pointer drops, then the indicator goes to the maximum again, etc.
    Could this mean damage to the engine temperature sensor? 2.0 HDI engine

    Yes, it will be a damaged sensor, but the preview of the actual parameters or even the measurement of the resistance of this sensor will confirm it.

    The defect is as old as the Peugeot 206, it is surprising that so many readers do not know the correct answer, and it is - a damaged relay (more often green) of the first gear of the radiator fan.

    Yes, it's a coolant temperature sensor, not a first gear radiator fan. The entire repair took several minutes, the problem was solved.
