On the Asus H61M-K board I have pins described as AAFP (front panel connection). The question is, can I connect a panel with an HD Audio socket to AAFP? Can such a panel with HD Audio be easily connected to the AAFP and use the HD Audio jacks (headphones) while having the speakers connected to the audio output at the back of the computer?

You have everything described clearly - well .. in English. English. Pinout supports both standards.
You just need to switch the standard to HD Audio in the BIOS and connect the HD Audio plug.
As for the headphones on FP, you also have 2 options: in the Realtek panel (yellow folder icon) - mute the audio output on the back, after plugging in the headphones at the front or playing "full" on both sides at once.

Connect normally and it will work. In UEFI, there is rather no option to switch to AC97.
By default, the rear outputs will be muted when headphones are plugged in.
