I'm having my house wired soon (finally) and have found a local CCTV company who can also do networking. I'm curious about the best practice for wiring access points. Is it normal to have a wall jack on the ceiling and a short patch cable or is the cable terminated with an RJ45?

The best practice is to run cat 6 cables to all stationary devices and make wall sockets. And access points only as a flower for a sheepskin coat, etc. In addition, the number and arrangement of points so that there is no more than one thin wall between each point and the client device, because the WiFi radio signal with DECENT parameters usually cannot overcome more.
