Hi, I am trying to build a remote control for speaker level.

Ideally I would take the speaker wires from my amplifier and plug them into a box. The box would have a RF or IR controlled digital potentiometer, then outputs to send the signal to the speakers VIA speaker wire.

This is the exact idea, I just need the parts

Hi,

I believe it is technically the same with what was in your mind. Unless your speakers are already powered with bluetooth, that would be a different story. Never the less, You will have to connect the speakers to the mixer(the box your referring here). Then the mixer is the one that will control the volume.
