Talk to people that have been involved in other theartre restoration, they may be able to point you in the right direction.
There is no specific training for this type of work, but no doubt some engineers or electricians may have specialized in theartre work in the past, building designers would either have there own electricians, or employed contractors that they regularly worked with. There are only so many ways that circuits work, and a competent electrician could probably figure it out. You may need to seek out some older, or even retired engineers or electricians, who may be more familiar with what you have found in the building. Other than that, it is hard to know what to suggest.
If there is no one locally, then a lot of photos would help, you may be able to send them to someone outside of the area where you are located that could help, which brings me back to my first comment.
