I am afraid you may need to clarify what you are trying to achieve.Firstly I am unsure as to why you are using MOSFETs to control the pins unless you are trying to level shift the signals, and perhaps invert them.Second of all your request for U/D in standby mode described in the 3rd and 4th row seems to be at odds with the operation of the X9C102. As I understand the data sheet, the 1st and 2nd rows deal with incrementing and decrementing the pot. Row 3 describes how to transfer the current pot setting into non-volatile memory and nothing to do with standby. The 4th row is the standby mode where the device draws very little current and no increment or decrement is possible during standby.
