I know that the basic answer is NO, it does not matter which convention you use as long as you are consistent.
I'm wondering if there are ever unique situations where it is important to know how the ELECTRONS are moving.
Certain types of components?The order through which electrons pass through a series of components?Do certain industries have to be very aware of electron flow direction?

The truth is that electron flow is technically correct. There are things such as plasma where "positive charge can flow"...The practical applications of conventional current flow can be with electric motors. The practical applications of the electron flow can be found in transistors.
