Parts List and Power Requirements for 80 cu ft 165°F Electric Oven Build

Good morning,

I'm wanting to build an electric oven to cure at a lower temp. (165 deg.F) However, I am new to understanding control systems

Constraints:
-estimated need of 2500-3000 Watts to warm parts inside of 80 cubic ft
-must include a fan to circulate air inside
-oven needs to regulate temp. at least within 5-10 deg. accuracy

Questions:
-what kind of power do I need? 240V? 3 phase?
-can you list all the parts I need for this oven to work? *I need it to regulate temp and turn on a fan. A touch screen would be nice for me to turn on the oven and adjust the temp if possible.
-do I need fuses after every component?
-what kind of wires do I need?
-do I need 24VDC or 12VDC or none at all?

If you just want to build one, I suggest the following approach.

Find a full size electric convection oven (or two). If possible, get one that allows you to set the temperature in the range you desire. Remove heating elements, thermostat/temperature sensor, fan and controller boards. Keep track of original wiring connections and fuses, relays etc. for the parts when you remove them from the oven.

Build your 80 cubic ft insulated box and mount the oven parts inside (except for the controller display and buttons which goes outside).

Wire it up like it was before (with longer wires) and test. It would be useful at this point to have additional thermocouples or temperature sensors that you can put at different points in the box. It's likely that you will have to adjust the position of heating elements, fan and oven temperature sensor for the best results.

If the oven controller doesn't quite do what you want, then you will need to get an Arduino or similar to use as controller. I'd suggest to do an internet search for projects on turning a toaster oven into a re-flow oven. Different requirements but the control side is similar.
