Welcome,

is there a known and proven way to read data from a central heating furnace. Buderus with RC35 keypad via rs485 bus with modbus rtu protocol ?

For ModBus RTU I have not found but there is light at the tunnel You can buy a module and as the furnace uses EMS it is possible to talk to it.
