Anybody know what ESPEasy software I should upload to this relay?
    .
I'm afraid that no version of ESPEasy will be suitable. In this module it is the STC 15F104W chip that is directly responsible for controlling the relay and is connected via UART to the ESP.
You can control this module via MQTT, the program can be found here: Link .

Is this module compatible with LCTech relays, e.g. this:

I'm a bit confused about what with what?
Generally the conversion from 12V to 5V involves replacing the relay with a 5V relay and shorting out the place marked R5 on the board - that's all.
Maybe the 12V relay will work on 5V? - check.
As for software, the two relays pictured have different procs (Nuwoton/STC) - so see which one you have and apply the appropriate soft. As they describe in the link about Tasmota.
