    Welcome
To start with, what platform should I use to host all this?

Preferably a simple, free and secure one.

For a good day - 2 thermostatic heads will be connected (not yet purchased - so the question is what is the most suitable for the proposed platform solution),
Then light switches - 5 rooms,

Is it possible to integrate Samsung Smart Things devices - washing machine, and tv?

    Next step - connecting a camera, e.g. Tp-link,
    And probably smart sockets.

Is it possible to control and monitor these devices using ONE application?

    thank you for your answers

And zigbee devices? Plus a zigbee gateway?

You will find a list of supported integrations on the Home Assistant website, but new ones are coming in all the time anyway. In addition, check out the unofficial integrations, plus the supported integrations and standards of the EspHome project - which is also part of HA. In short I will summarise that you can connect almost anything, and many things in several ways. To support a Zigbee network you need a coordinator - I suggest a Conbee-type multiboard supporting different manufacturers.

    Question regarding thermostatic heads

Is there a thermostatic head on the market that allows manual temperature control to be disabled?

I am also going to have Zigbee in my company and I would like to completely block the manual temperature control on the radiator.

or that the temperature settings are locked in the software

The parental lock is a different lock than the one I mentioned.

Anyone had experience with such heads?

    .

Well, but the parental lock blocks manual changes on the head.
I mean you can turn, but the temperature is only set in the app.
I have a Tado, and that's how it works there....

But the parental lock - adults will unlock it without any problem.

Only if they have the app. There is no way to remove the lock on the thermostat.

what I mean is that parental locking is usually done by holding down the (-) key for 5 seconds.

In Tado you won't do it that way. The lock is via the app and there is no way to remove it directly from the thermostat.
