Image output from RPI to monitor will work Touch implementation .... it's more a question of not the system, but whether the application can. For traditional console 2 GB RAM will be sufficient in situations that I can reasonably imagine. For a complex graphics application ... It will be frogged, I think.

If the touch works with a USB mouse - it will work.

Mice, but there are subtleties (I know this monitor on Windows).

Lately, a plethora of touchscreen monitors for POS systems can be found on portals.
